Asian Style Crispy Noodle Salad with Locusts

This fresh and tasty salad is a great way to incorporate whole insects into a meal. Either served as a side or as a main course, this is sure to get your dinner guests talking! By lightly frying the locusts up with garlic you add an explosion of flavour that compliments that of the locusts.
Using insects in recipes like this is a really easy way to get the benefits of eating insects. Like high levels of protein, B12, all 9 omega fatty acids, iron and calcium. THIS SALAD IS:

SALAD
1 clove garlic, diced
1 tbsp olive oil
10g Lightly Salted Locusts
1/4 red cabbage
1/4 green cabbage
1/2 red capsicum
1/2 green capsicum
1 carrot
1 cup crispy noodles
1/2 tsp sesame seeds
DRESSING
1/2 tsp sesame seeds
2 tbsp sweet chilli sauce
2 tbsp sesame oil
2 tbsp soy sauce
2. To make dressing, place all ingredients in a small bowl and mix until combined.
3. Thinly chop all other salad ingredients, and place in a mixing bowl. Pour over dressing and mix. Add the crispy noodles and mix again.
4. Serve salad in a bowl and place sautéed locusts on top. Garnish with more sesame seeds.
