Cricket Flour Seed Crackers

UPDATED RECIPE: This is a super easy and tasty recipe. It makes the perfect crackers that are healthy and high in protein. Eat them as they are, or loaded with avocado or your favourite toppings. It only requires one bowl and most ingredients you might already have in your pantry!

Using cricket flour in recipes like this is a really easy way to get the benefits of eating insects. Like high levels of protein, B12, all 9 omega fatty acids, iron and calcium.

INGREDIENTS 

1/2 cup sunflower seeds
1/2 cup pumpkins seeds
1/4 cup sesame seeds
1/4 cup linseed / flax seeds
1/4 cup chia seeds
1/4 cup Cricket Flour
1/2 tsp salt
220ml water
2 TB olive oil
2 TB dried rosemary
1 tsp flaky sea salt, to sprinkle 

METHOD 

1. Heat oven to 170C. Place all seeds, Cricket Flour, rosemary, salt in a bowl. Add the water and mix to combine. Leave it for 15 minutes for the flax seeds & chia seeds to soften and bind with the ingredients together. Add the olive oil and mix through.

2. Tip half of mixture out onto a baking paper lined tray. Cover with second sheet of baking paper and roll out until it covers most of your oven tray (about 4mm thick). The thickness of pumpkin seeds will help not to roll out too thin. Peel off top paper layer and sprinkle desired amount of sea salt over top. Cut the mixture into crackers with a pizza cutter or knife. Repeat with other half of mixture on next tray.

3. Bake for 25 minutes until crisp and golden.

4. Remove from tray and allow to cool on a rack and store in an airtight container.
